It combines coleslaw mix, onion, and shallots with tomato juice, diced tomatoes, and a hint of chilli paste. The mixture simmers for an hour before chopped ham is added for the final 15 minutes, creating a rich and satisfying dish perfect for a crowd. Ingredients
- 2 teaspoons olive oil
- 1 package coleslaw mix
- 1 vidalia onion, diced
- 4 shallots, sliced
- 1 (46 ounce) can tomato juice
- 1 (14 ounce) can hunts diced garlic balsamic & olive oil diced tomatoes
- 4 cups water
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- 3 cups chopped ham
- 1 tablespoon chili paste
Method
- Cook the coleslaw mix, diced onion, and sliced shallots in the olive oil until they become soft.
- Pour in the tomato juice, diced tomatoes, water, sugar, salt, and fresh ground pepper.
- Stir the chilli paste into the soup mixture.
- Allow the soup to simmer for 1 hour.
- Add the chopped ham during the last 15 minutes of the cooking time.
