Tomato Ham Soup

Ingredients

  • 2 teaspoons olive oil
  • 1 package coleslaw mix
  • 1 vidalia onion, diced
  • 4 shallots, sliced
  • 1 (46 ounce) can tomato juice
  • 1 (14 ounce) can hunts diced garlic balsamic & olive oil diced tomatoes
  • 4 cups water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper
  • 3 cups chopped ham
  • 1 tablespoon chili paste

Method

  1. Cook the coleslaw mix, diced onion, and sliced shallots in the olive oil until they become soft.
  2. Pour in the tomato juice, diced tomatoes, water, sugar, salt, and fresh ground pepper.
  3. Stir the chilli paste into the soup mixture.
