Self Basting Ham Loaf
This is a classic Pennsylvania Dutch dish, a self-basting loaf made from a mixture of ground pork and cooked ham. The loaf is shaped and baked, developing a flavourful glaze from a combination of brown sugar, crushed pineapple, and mustard during cooking. It yields a moist, savoury main course that serves six people. The total preparation and cooking time is approximately 95 minutes.
Ingredients
- 1 1/2 lbs ground pork
- 1 1/2 lbs ground cooked ham
- 1/2 cup breadcrumbs
- 1 small yellow onion, chopped (optional)
- 1/2 teaspoon white pepper or 1/2 teaspoon ground black pepper
- 1 cup brown sugar
- 1 (8 ounce) can crushed pineapple with juice, partially drained
- 1/4 cup mustard (I use spicy brown)
Method
- Heat the oven to 350 degrees.
- Lightly coat a cookie sheet with cooking spray.
- Combine all the loaf ingredients thoroughly in a large mixing bowl.
- Form the mixture into a loaf shape on the prepared cookie sheet.
- Bake at 350 degrees for 1 1/2 hours.
