Crock Pot Ham and Beans
This economical slow cooker dish is ideal for a hearty, satisfying meal. Dried beans are soaked or quick-boiled, then combined with smoked ham, onion, garlic, and aromatic spices in the crock pot. It cooks slowly for 8 hours until the beans become tender and creamy. The result is a simple, flavourful stew that pairs wonderfully with freshly baked corn muffins. It makes four generous servings.
Ingredients
- 1 lb dried great northern beans (mixed if desired) or 1 lb other dried beans (mixed if desired)
- 3 garlic cloves, peeled and sliced
- 1 large sweet onion, chopped coarsely
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped parsley
- 1/4 teaspoon ground cloves
- 1 lb smoked ham or 1 lb ham hock
- 6 cups water or 6 cups broth
Method
- Pick through the beans and soak them in sufficient water overnight.
- Alternatively, sort the beans and put them in a saucepan covered by 2-inches of water.
- Heat the pan until boiling, continue boiling for 3 minutes, then cover and take off the heat.
- Let the beans stand for one hour without removing the lid.
- After using either preparation, rinse and drain the beans before adding them to the crock pot.
- Transfer the beans to the crock pot with the garlic, onion, kosher salt, black pepper, parsley, ground cloves, and the ham cut into large pieces or ham hocks, plus 6 cups of water or broth.
- Put the lid on the crock pot and cook on the low setting for about 8 hours, until the beans are soft and creamy.
- If needed, remove any extra fat from the surface before you serve the dish.
