Almond Crusted Tilapia

Ingredients

  • 2 tilapia fillets
  • 1/4 cup flour
  • 1 egg, lightly beaten
  • 1 cup sliced almonds
  • salt
  • pepper
  • Old Bay Seasoning
  • 1 lemon
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 scallions, sliced

Method

  1. Sprinkle the tilapia fillets with salt, pepper and Old Bay Seasoning.
  2. Coat the seasoned fish lightly in the flour, then submerge it in the beaten egg.
  3. Firmly press the sliced almonds onto all sides of each fillet.
  4. Warm the butter and olive oil together in an oven-safe pan.
  5. Gently place the coated fillets into the hot pan to avoid dislodging the almonds. Cook for 1 minute to brown, then flip carefully. Squeeze the juice from half a lemon over the fish and transfer the pan to a preheated 350 degree oven for 10-15 minutes.
  6. Take the pan from the oven and move the fish to a serving platter with care. Squeeze the remaining lemon half over the top.
  7. Scatter the sliced scallions over the fish as a garnish before serving.
