Almond Crusted Tilapia
This recipe coats tilapia fillets in a crunchy crust of sliced almonds, which toast beautifully in the oven for a rich flavour. The fish is first seasoned, then coated in flour and egg before the almonds are pressed on. It is pan-seared and finished in the oven, resulting in a quick and tasty main course. The dish is finished with fresh lemon juice and a garnish of scallions. It serves two to four people and is ready in about 20 minutes.
Ingredients
- 2 tilapia fillets
- 1/4 cup flour
- 1 egg, lightly beaten
- 1 cup sliced almonds
- salt
- pepper
- Old Bay Seasoning
- 1 lemon
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 scallions, sliced
Method
- Sprinkle the tilapia fillets with salt, pepper and Old Bay Seasoning.
- Coat the seasoned fish lightly in the flour, then submerge it in the beaten egg.
- Firmly press the sliced almonds onto all sides of each fillet.
- Warm the butter and olive oil together in an oven-safe pan.
- Gently place the coated fillets into the hot pan to avoid dislodging the almonds. Cook for 1 minute to brown, then flip carefully. Squeeze the juice from half a lemon over the fish and transfer the pan to a preheated 350 degree oven for 10-15 minutes.
- Take the pan from the oven and move the fish to a serving platter with care. Squeeze the remaining lemon half over the top.
- Scatter the sliced scallions over the fish as a garnish before serving.
