Grilled Tilapia With Spicy Lemon Pepper Rub

Ingredients

  • 1/4 cup lemon pepper seasoning
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 1/2 teaspoons firmly packed light brown sugar or 1 1/2 teaspoons dark brown sugar
  • 1/2 teaspoon kosher salt or 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon red pepper flakes
  • 1 1/4 teaspoons fresh ground black pepper
  • 4 tilapia fillets, about 6 ounces each
  • olive oil
  • kosher salt or sea salt & freshly ground black pepper, to taste
  • 1/2 cup unsalted butter, melted (1 stick)
  • 2 tablespoons fresh lemon juice

Method

  1. Light a grill to achieve a high heat. Coat the grate and a perforated grill rack with oil.
  2. For the rub, place all the listed dry ingredients into a small jar with a secure lid. Fasten the lid and shake the jar to mix them thoroughly.
  3. Lightly coat both sides of each tilapia fillet with olive oil. Sprinkle roughly 1 teaspoon of the prepared rub onto each fillet. Reserve any leftover rub for future use.
  4. Set the fish, flesh side facing down, onto the oiled perforated rack. Grill for 10 minutes per inch of thickness, turning the fillets once during cooking. The fish is ready when it flakes easily with a fork at its thickest point.
  5. Take the fish off the grill and add salt and pepper as desired. Mix the melted butter with the fresh lemon juice, then pour this lemon butter over the grilled tilapia. Serve immediately while hot.
