Alfredo Shrimp Tilapia
This dish features tilapia fillets baked with Creole seasoning, then finished with a rich topping of warmed alfredo sauce, tender sauteed red pepper slivers, and garlic butter shrimp. A sprinkle of grated cheese adds a final savoury note. Inspired by a restaurant favourite, it's a satisfying seafood meal that comes together quickly.
Ingredients
- 2 1/2 lbs tilapia fillets
- 1 cup alfredo sauce
- 3/4 lb shrimp, cleaned,shelled and deveined
- 2 tablespoons creole seasoning
- 1 sweet red pepper, sliced very thin into slivers
- 3 tablespoons olive oil
- 4 tablespoons butter, divided
- 2 cloves garlic, finely minced
- 3 tablespoons grated romano cheese or 3 tablespoons parmesan cheese, for topping
Method
- Heat your oven to 425*.
- Pat the tilapia fillets dry, then coat them with olive oil and Creole seasoning according to your preference.
- Arrange the fish in a greased baking dish and cook for 8-10 minutes, until the flesh turns opaque.
- As the fish bakes, cook the thin red pepper strips in 1 tbs butter for approximately 5 minutes until tender.
- Gently heat the alfredo sauce in a small pan.
- Melt 3 tbs butter in a frying pan, add the minced garlic and prepared shrimp, and cook for about 5 minutes.
- Once cooked, take the baking dish out of the oven.
- Gently transfer the fillets to plates, allowing four per serving.
- Distribute a quarter of the cooked peppers and a quarter of the shrimp over each portion of fish.
- Spoon 1/4 cup of alfredo sauce over each, then finish with a sprinkle of grated cheese and an extra pinch of Creole seasoning.
- For a golden finish, you may briefly place the plates under a broiler for about a minute.
