Tilapia Bake
This recipe offers a flavourful way to prepare mild tilapia fillets. The fish is baked with a fresh topping made from tomatoes, green olives, red onion, garlic and thyme, finished with a dash of lime and chilli. It's a healthy, low fat meal that cooks quickly, making it perfect for a simple weeknight dinner. The dish serves four to six people and takes around 35 minutes from start to finish.
Ingredients
- 6 tilapia fillets
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 3 tomatoes, peeled,seeded,and chopped
- 1/2 cup chopped green olives
- 1 dash hot pepper flakes
- 2 cloves garlic, minced
- 1/2 cup finely chopped red onion
- 1 tablespoon lime juice
- salt and pepper
Method
- Arrange the tilapia fillets with the skin side facing down in a single layer within a greased, shallow baking dish.
- Combine all the other listed ingredients thoroughly and distribute this mixture evenly over the fish.
- Place the dish in an oven preheated to 400 degrees and bake for 15 to 20 minutes, until the fish flakes apart readily with a fork.
