This recipe offers a delightful way to prepare tilapia, a fish with a flavour similar to cod. The fillets are first marinated in apple cider vinegar before being gently poached in a garlic-infused water. They are then seasoned with basil and paprika and simmered until tender. Each serving is finished with a spoonful of a creamy horseradish and mayonnaise mixture and a fresh lemon wedge for a bright, tangy finish.

Tasty Tilapia Fillets

Ingredients

  • 2 filleted tilapia fillets, about 4 fillets
  • 1 cup apple cider vinegar, more if needed
  • 2 tablespoons horseradish
  • 2 tablespoons low-fat mayonnaise
  • 2 garlic cloves, minced
  • 1 teaspoon basil leaves
  • 1 tablespoon paprika
  • 1 medium lemon, wedged

Method

  1. Rinse the tilapia fillets and arrange them in a flat dish that is not metal. Pour over the apple cider vinegar to cover them. Allow this to marinate in the refrigerator for 1/2 hour.
  2. Combine the low-fat mayonnaise with the horseradish in a small bowl. Set this mixture aside for later.
  3. In a large pan, bring enough water to reach a depth of 1/2 inch to a boil. Add the minced garlic to the water, then remove the pan from the heat. Take the tilapia out of the vinegar and carefully place it into the hot water. Return the pan to the heat and set it to very low.
  4. Scatter the basil leaves and paprika over the fish fillets. Cover the pan and allow the contents to very lightly simmer for 10-15 minutes. After this time, switch off the heat.
  5. Plate the cooked tilapia and top each fillet with a spoonful of the reserved horseradish and mayonnaise blend. Accompany each portion with a wedge of lemon.
