Snappy Tilapia Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion
  • 1 clove garlic, crushed
  • 1 (14 1/2 ounce) can diced tomatoes with green pepper and onion, undrained
  • 1/4 cup salsa
  • 1 lb tilapia fillet

Method

  1. Warm the olive oil in a 12 inch skillet.
  2. Slice the onion into pieces 1/4 inch thick, then halve each slice.
  3. Cook the onion and crushed garlic in the skillet for 2 minutes until they begin to soften.
  4. Pour in the undrained tomatoes and salsa, bring to a boil, and let it cook for 2 minutes.
  5. Place the tilapia fillets into the skillet, lower the heat a little, cover, and cook for about 5 minutes or until the fish flakes easily with a fork.
  6. Transfer the cooked fish to a plate and top generously with the warm tomato-salsa mixture.
