Ingredients
- 1 tablespoon olive oil
- 1 small onion
- 1 clove garlic, crushed
- 1 (14 1/2 ounce) can diced tomatoes with green pepper and onion, undrained
- 1/4 cup salsa
- 1 lb tilapia fillet
Method
- Warm the olive oil in a 12 inch skillet.
- Slice the onion into pieces 1/4 inch thick, then halve each slice.
- Cook the onion and crushed garlic in the skillet for 2 minutes until they begin to soften.
- Pour in the undrained tomatoes and salsa, bring to a boil, and let it cook for 2 minutes.
- Place the tilapia fillets into the skillet, lower the heat a little, cover, and cook for about 5 minutes or until the fish flakes easily with a fork.
- Transfer the cooked fish to a plate and top generously with the warm tomato-salsa mixture.
