Spicy Garbanzos
This Mexican-inspired dish features garbanzo beans simmered in a spiced tomato broth. The base begins with onions and mustard seeds sautéed in oil. Chicken broth, tomato paste, salt, cinnamon, and clove are then added to create a fragrant sauce. The rinsed beans are heated through in just a few minutes, resulting in a simple yet deeply flavoured side or main for six people.
Ingredients
- 1 tablespoon oil
- 1 teaspoon whole mustard seeds
- 1 medium onion, chopped
- 1/2 cup chicken broth
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1/8 teaspoon cinnamon
- 1/8 teaspoon clove
- 2 (15 ounce) cans garbanzo beans, rinsed and drained
Method
- Warm the oil in a 2 quart saucepan.
- Place the chopped onion and mustard seeds into the hot oil and cook until the onion softens.
- Pour in the chicken broth and stir through the tomato paste, salt, cinnamon, and clove.
- Add the rinsed and drained garbanzo beans to the saucepan.
- Allow everything to heat for about 5 minutes until the beans are thoroughly warmed.
