Mexican Guacamole Dip
This authentic Mexican guacamole is a guaranteed party favourite, often winning over those who think they dislike avocado. The recipe comes directly from a family in Mexico and omits lime juice and jalapeño peppers for a pure, simple flavour. It uses just a handful of fresh ingredients: ripe Hass avocados, tomato, onion, and cilantro. You can easily double or triple the quantities for a larger gathering. The whole process takes about 15 minutes to prepare.
Ingredients
- 2 ripe Hass avocadoes (avocados should be turning dark brown and pliable)
- 1 medium tomatoes, diced
- 1/2 medium onion, diced
- 1/2 cup fresh cilantro, minced

Method
- Halve each avocado.
- Take out the pit from each half.
- Use a knife to score the avocado flesh in a criss-cross pattern.
- This method will produce small cubes of avocado.
- Scoop the cubed avocado from all halves into a mixing bowl.
- Incorporate the diced tomato, diced onion, and minced cilantro.
- Gently combine everything.
- Stir until the mixture reaches a dip-like texture.
- The finished dip should retain some chunky pieces.
