Green Chili Sauce
This vibrant green chili sauce is built on a base of fire-roasted peppers, blended with fresh cilantro, scallions, and sweet onion. A touch of honey and lime juice balances the flavours, which are then simmered to develop a rich, cohesive sauce. It is an excellent topping for enchiladas and makes a generous quantity for multiple meals. The entire process takes about 2 hours and 45 minutes to complete.
Ingredients
- 12 green chili peppers
- 1 tablespoon minced garlic
- 1 cup cilantro
- 1/4 cup honey
- 1 tomatoes
- 1 tablespoon lime juice
- sea salt
- 8 scallions
- 1 sweet onion
- 2 tablespoons chicken soup base
- 3 cups water
- 1 cup salsa
Method
- Fire roast the green chili peppers.
- Take off the skins, and discard the seeds and stems.
- Place all the listed ingredients into a blender and process until smooth.
- Transfer the blended mixture to a pot and let it simmer for 2 hours.
- Spoon the finished sauce over your prepared enchiladas to serve.
