Spicy Cheese Soup
This hearty Mexican soup combines seasoned ground beef with creamy nacho cheese, tomatoes, kidney beans and sweetcorn. Flavoured with taco seasoning, it creates a rich and spicy base. The soup is quickly heated through on the hob, but can also be gently cooked in a slow cooker for a more developed taste. Serve it with classic toppings like jalapeños, sour cream and tortilla chips for a complete meal.
Ingredients
- 1 lb ground beef, cooked
- 1 (16 ounce) jar nacho cheese sauce, Ragu Brand Recommended
- 2 (10 ounce) cans diced tomatoes with green chilies
- 1 (15 1/4 ounce) can kidney beans
- 1 (15 1/4 ounce) can corn
- 1 1/4 ounces taco seasoning mix
- jalapeno pepper, Black Olives, Sour Cream, Tortilla Chips
Method
- Mix all the listed ingredients together in a pot.
- Warm the mixture on the hob until it is thoroughly heated and begins to bubble.
- For an alternative method, you can prepare this in a crock pot.
- If using a crock pot, cook it on high for 3 hours.
- Alternatively, cook it on a low setting for 5-8 hours.
- Adjust the cooking duration according to your preference, as the goal is simply to heat all components.
