Cheesy Ham and Rice Soup
This rich and creamy soup combines tender ham with a mix of wild and brown rice in a velvety cheese sauce. Vegetables are sauteed to build flavour before being stirred into the cheesy base. It is a filling and comforting dish that comes together quickly, making it ideal for a family meal. The optional almonds add a pleasant crunch on top.
Ingredients
- 4 stalks celery, chopped
- 1 large onion, chopped
- 1/4 cup butter or 1/4 cup margarine
- 4 medium carrots, shredded
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups half-and-half cream
- 8 ounces Velveeta cheese, cubed
- 4 cups cooked wild rice
- 3 cups cooked ham, cubed
- 2 2/3 cups cooked brown rice
- 3 tablespoons chicken bouillon granules
- 8 cups water
- slivered almonds (optional)
Method
- Saute the chopped celery and onion in butter within a saucepan until they become tender.
- Introduce the shredded carrots and cook while stirring for 1-2 minutes.
- Place the flour, salt and pepper together in a large kettle or Dutch oven.
- Pour in the half and half cream gradually, stirring continuously.
- Bring the mixture to a boil and cook while stirring for 2 minutes or until it thickens.
- Take the pot off the heat and mix in the cubed Velveeta cheese until it melts fully.
- Add the cooked wild rice, cubed ham, cooked brown rice, chicken bouillon granules, the celery mixture and water to the pot.
- Bring the soup back to a boil.
- Top with slivered almonds before serving, if you like.
