3-Layer Mexican Party Dip
This popular party dip features three distinct layers for a crowd-pleasing appetiser. A base of refried beans is covered with guacamole, then a seasoned sour cream mixture. It's finished with grated cheddar, fresh tomatoes, black olives and scallions. You can enjoy it immediately or bake it until hot and bubbly. Perfect for sharing with friends and family.
Ingredients
- 1 (16 ounce) can refried beans
- 1 1/2 cups tabasco guacamole (one of my 'Zaar listed recipes)
- 1 1/2 cups sour cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- salt and pepper
- 1/2 cup grated sharp cheddar cheese
- 1/2 cup seeded and sliced ripe plum tomato (1/4-inch)
- 1/4 cup chopped pitted black olives
- 2 scallions, halved lengthwise and sliced (3-inch of green left on)
Method
- Use a spatula to spread the refried beans evenly across the base of a 10-inch round glass baking dish, then cover this layer completely with the guacamole.
- Mix the sour cream with the garlic powder, cumin, chilli powder, salt and pepper in a separate bowl until well combined, then spread this mixture carefully over the guacamole layer.
- Evenly scatter the grated cheddar cheese, sliced plum tomatoes, chopped black olives and sliced scallions over the top of the sour cream layer.
- The dip can be served straight away at room temperature, or for a hot version, bake it in a 425°F oven for 15 minutes before serving.
