15 Bean Soup (Crock Pot)
This is a robust and satisfying soup prepared in a crock pot. It starts with a mix of fifteen different beans, which are soaked overnight before cooking. The broth is enriched with a ham bone, garlic, beef bouillon and Worcestershire sauce. Diced tomatoes and pan-fried smoked sausage are added, resulting in a deeply flavourful dish that is perfect for feeding a large group. The total preparation and cooking time is around eight and a half hours.
Ingredients
- 1 (20 ounce) bag 15 bean soup mix
- 8 cups water
- 1 ham bone (or any leftover ham)
- 3 teaspoons minced garlic (jar is fine)
- 3 teaspoons beef bouillon paste or 3 beef bouillon cubes
- 1 1/2 teaspoons black pepper
- 3 tablespoons Worcestershire sauce
- 2 teaspoons steak sauce
- 2 (10 ounce) cans diced tomatoes
- 1 1/2 lbs smoked sausage, quartered
Method
- Rinse the beans using a strainer.
- Transfer the rinsed beans to a bowl and cover them fully with water. Let them sit for a couple of hours, then rinse and refill the water.
- Allow the beans to soak overnight.
- The following day, rinse the beans once more and put them into your crock pot.
- Add all the remaining ingredients to the crock pot, but leave out the sausage.
- Put the lid on the crock pot.
- Set the crock pot to low heat and cook for 6 hours.
- In a separate pan, cook the quartered sausage until browned.
- Transfer the cooked sausage and any pan drippings into the soup.
- Carry on cooking the soup on the low setting for a further 2 hours.
- The soup is now ready to serve.
