This is a robust and satisfying soup prepared in a crock pot. It starts with a mix of fifteen different beans, which are soaked overnight before cooking. The broth is enriched with a ham bone, garlic, beef bouillon and Worcestershire sauce. Diced tomatoes and pan-fried smoked sausage are added, resulting in a deeply flavourful dish that is perfect for feeding a large group. The total preparation and cooking time is around eight and a half hours.

Ingredients

  • 1 (20 ounce) bag 15 bean soup mix
  • 8 cups water
  • 1 ham bone (or any leftover ham)
  • 3 teaspoons minced garlic (jar is fine)
  • 3 teaspoons beef bouillon paste or 3 beef bouillon cubes
  • 1 1/2 teaspoons black pepper
  • 3 tablespoons Worcestershire sauce
  • 2 teaspoons steak sauce
  • 2 (10 ounce) cans diced tomatoes
  • 1 1/2 lbs smoked sausage, quartered

Method

  1. Rinse the beans using a strainer.
  2. Transfer the rinsed beans to a bowl and cover them fully with water. Let them sit for a couple of hours, then rinse and refill the water.
  3. Allow the beans to soak overnight.
  4. The following day, rinse the beans once more and put them into your crock pot.
  5. Add all the remaining ingredients to the crock pot, but leave out the sausage.
  6. Put the lid on the crock pot.
  7. Set the crock pot to low heat and cook for 6 hours.
  8. In a separate pan, cook the quartered sausage until browned.
  9. Transfer the cooked sausage and any pan drippings into the soup.
  10. Carry on cooking the soup on the low setting for a further 2 hours.
  11. The soup is now ready to serve.
