Zesty Roasted Red Pepper Rollups
These simple rollups are a fantastic party snack. Using jarred roasted red peppers for convenience, they are combined with cheddar, parmesan, and herbs in a creamy spread. The mixture is rolled inside flattened bread, chilled, and then baked until crisp. They freeze beautifully, ensuring you always have a delicious appetiser ready for guests. Expect them to vanish quickly from any platter.
Ingredients
- 370 ml roasted red peppers, jarred strips
- 2/3 cup old cheddar cheese, shredded
- 1/3 cup parmigiano-reggiano cheese, finely grated
- 4 tablespoons fresh parsley, finely chopped
- 3 tablespoons light mayonnaise, regular is OK too
- 3/4 teaspoon dried thyme, rubbed to enhance its flavour
- 3/4 teaspoon dried basil, rubbed to enhance its flavour
- 1/2 teaspoon salt, I prefer kosher
- 1/4 teaspoon fresh ground black pepper
- 12 slices white bread, thick sliced
- 1/4 cup butter, melted
- 1/2 teaspoon paprika
Method
- Stir the melted butter and paprika together in a small bowl and set it aside.
- Remove the crusts from the bread slices and flatten each one with a rolling pin to about 1/8 inch thick.
- Drain the jarred red pepper strips and chop them finely.
- In a bowl, mix the chopped peppers, shredded cheddar, grated parmesan, parsley, mayonnaise, thyme, basil, salt, and black pepper until well combined.
- Lay out two long pieces of plastic wrap. Place the flattened bread slices on top and lightly brush one side with the butter mixture. Turn them over and brush the other side with the remaining mixture.
- Evenly spread the cheese and pepper filling onto each bread slice, leaving a 1/2 inch border at the top edge and a small margin at the sides.
- Starting from the bottom, tightly roll each slice towards the empty border, tucking in any filling that escapes.
- Slice each roll in half and place them seam-side down on a baking tray lined with parchment. Cover with plastic and refrigerate for 2 hours.
- Take off the plastic wrap and bake the rollups in a preheated oven at 350-375 for about 20 minutes, or until crisp and golden. If baking from frozen, add an extra 5 minute.
- Watch them carefully as they bake, as these easy-to-make bites tend to get eaten very fast.
