Sweet Onion Vinaigrette
This versatile vinaigrette combines finely chopped sweet onion with apple cider vinegar, sugar, and coarse grain mustard. A hint of cumin and optional ground red pepper adds depth. Whisked with oil, it creates a smooth, flavourful dressing that is ideal for more than just salads. It pairs wonderfully with roasted vegetables, fish, meat, or rice. The recipe yields 1 1/4 cups and requires only 10 minutes of preparation time.
Ingredients
- 1/2 cup sweet onion, finely chopped
- 1/3 cup apple cider vinegar
- 3 tablespoons sugar (or 2-3 tbls. honey or agave syrup)
- 2 tablespoons coarse grain mustard
- 1 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- 1/8 teaspoon ground red pepper (optional)
- 1/2 cup canola oil (I like to use olive oil)
Method
- Combine all the listed ingredients apart from the oil in a bowl, whisking them together.
- Pour the oil in a slow, steady stream while you continue to whisk constantly, until the mixture is smooth.
- Cover the vinaigrette and place it in the refrigerator to chill for 30 minutes or longer before you use it. It works well on salads, roasted vegetables, fish, meat, and rice.
