South Beach Diet Balsamic Vinaigrette
This is a Phase I recipe from the South Beach Diet. It takes roughly 30 seconds to prepare and yields about 2/3 cup. The versatile dressing works well tossed with salads or drizzled over cold chicken and fish, making it an ideal component for a diet-friendly lunch.
Ingredients
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 2 teaspoons fresh thyme, chopped or 1/2 teaspoon dried thyme
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Method
- Place every ingredient into a jar or another container that has a tight-fitting lid.
- Put the lid on securely and shake the container vigorously.
- Keep the prepared vinaigrette stored in your refrigerator.
