Sherry Dressing for Fruit Salad
This recipe creates a rich and creamy dressing, perfect for enhancing a fresh fruit salad. The base is gently cooked with sherry, sugar, and citrus juices before being chilled. Just before serving, softly whipped cream is folded through to create a light, luxurious texture. Ingredients
- 1 egg, beaten
- 1/4 cup sugar
- 1/4 cup sherry wine
- 1 dash salt (omit if commercial cooking sherry is used)
- 2 teaspoons butter
- 1/2 orange, juice of
- 1/2 lemon, juice of
- 1/4 cup heavy cream, whipped
Method
- In the top of a double boiler, mix together the beaten egg, 1/4 cup sugar, 1/4 cup sherry wine, a dash of salt, 2 teaspoons butter, and the juice from 1/2 orange and 1/2 lemon.
- Place the mixture over boiling water and cook, stirring continuously, until it has thickened slightly.
- Transfer the cooked mixture to a bowl and allow it to chill completely in the refrigerator.
- Immediately prior to serving, gently fold 1/4 cup of whipped heavy cream into the chilled dressing.
