Sherry Dressing for Fruit Salad

Ingredients

  • 1 egg, beaten
  • 1/4 cup sugar
  • 1/4 cup sherry wine
  • 1 dash salt (omit if commercial cooking sherry is used)
  • 2 teaspoons butter
  • 1/2 orange, juice of
  • 1/2 lemon, juice of
  • 1/4 cup heavy cream, whipped

Method

  1. In the top of a double boiler, mix together the beaten egg, 1/4 cup sugar, 1/4 cup sherry wine, a dash of salt, 2 teaspoons butter, and the juice from 1/2 orange and 1/2 lemon.
  2. Place the mixture over boiling water and cook, stirring continuously, until it has thickened slightly.
  3. Transfer the cooked mixture to a bowl and allow it to chill completely in the refrigerator.
  4. Immediately prior to serving, gently fold 1/4 cup of whipped heavy cream into the chilled dressing.
