Ingredients

  • 1 clove garlic, coarsely chopped
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 pinch cayenne
  • 1/4 cup olive oil
  • 2 anchovy fillets or 1 teaspoon anchovy paste, chopped

Method

  1. For the dressing, put the garlic, red wine vinegar, salt, black pepper and cayenne into a blender or food processor with a metal blade. Process until the ingredients are combined.
  2. While the machine is still running, slowly pour in the olive oil. Start with just a few drops, then continue with a thin, steady stream.
  3. You will notice the mixture begin to thicken as it emulsifies.
  4. Keep the machine running and add the chopped anchovy fillets or anchovy paste. Check the seasoning and add more salt according to your preference.
  5. This dressing is ready to use immediately. You can also cover it and leave it out. For storage longer than 1 day, cover it and place it in the refrigerator.
