Outstanding Greek Salad Dressing
This recipe guides you through creating a traditional Greek salad dressing. Using a blender or food processor, you will combine garlic, vinegar and seasonings before slowly emulsifying with olive oil. Chopped anchovies or paste are added last for a savoury depth of flavour. The finished dressing can be used immediately or stored for later use, making it a versatile addition to your kitchen.
Ingredients
- 1 clove garlic, coarsely chopped
- 1 tablespoon red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper, freshly ground
- 1 pinch cayenne
- 1/4 cup olive oil
- 2 anchovy fillets or 1 teaspoon anchovy paste, chopped
Method
- For the dressing, put the garlic, red wine vinegar, salt, black pepper and cayenne into a blender or food processor with a metal blade. Process until the ingredients are combined.
- While the machine is still running, slowly pour in the olive oil. Start with just a few drops, then continue with a thin, steady stream.
- You will notice the mixture begin to thicken as it emulsifies.
- Keep the machine running and add the chopped anchovy fillets or anchovy paste. Check the seasoning and add more salt according to your preference.
- This dressing is ready to use immediately. You can also cover it and leave it out. For storage longer than 1 day, cover it and place it in the refrigerator.
