Pink Tarragon Cream Dressing
This creamy dressing boasts a lovely pink hue and a rich flavour from tarragon and sherry. While dried tarragon works well, fresh tarragon is even better. The recipe yields 3 cups, which is ample for many servings, but it can easily be halved. No salt or pepper is required, though you may add some to your preference. It is ready in just 5 minutes and benefits from chilling before use.
Ingredients
- 2 cups mayonnaise (must be full fat)
- 1 cup sour cream
- 1/2 cup sherry wine (not cooking sherry)
- 1 tablespoon dried tarragon, finely crushed or 1 1/2 tablespoons minced fresh tarragon
- 1 teaspoon garlic powder
- 1/4 teaspoon Tabasco sauce, to taste
- 2 -3 drops red food coloring or 2 -3 drops beet juice
- milk, to thin dressing (optional)
Method
- Combine the mayonnaise, sour cream, sherry, tarragon, garlic powder, and Tabasco sauce until thoroughly blended.
- Introduce a few drops of red food colouring to achieve a light pink tint.
- Should the consistency be too thick, you can add a little milk to thin it out.
- Ensure the dressing is well chilled prior to serving.
