Spinach Delight Salad
This beloved spinach salad is a simple yet impressive dish that comes together in just 20 minutes. It combines fresh spinach with crunchy water chestnuts, bean sprouts, chopped hard-boiled eggs, and crispy bacon. The flavour is completed with a sweet and tangy homemade dressing, which should be added at the last moment to keep the greens perfectly crisp. It's a favourite recipe passed down through family.
Ingredients
- 2 lbs fresh spinach, washed and torn
- 1 (16 ounce) can bean sprouts, drained
- 4 hard-boiled eggs, chopped
- 2 (8 ounce) cans water chestnuts, sliced
- 1/2 lb bacon, cooked and crumbled
- 1 cup salad oil
- 3/4 cup sugar
- 1/3 cup ketchup
- 1/4 cup vinegar
- 2 teaspoons salt
- 1 tablespoon Worcestershire sauce
- 1/2 cup onion, chopped
Method
- Combine all the dressing ingredients in a jar, ensuring they are mixed very thoroughly. If prepared in advance, mix thoroughly once more before use.
- Add all the prepared salad components to a large bowl and gently toss them together.
- Pour the dressing over the salad and toss it through immediately before you plan to serve.
- Remember that the spinach will wilt rapidly once dressed, so it is crucial to add the dressing only when ready to eat.
