Broccoli Salad
This reliable salad has been a favourite at gatherings for years. It combines fresh broccoli with crispy bacon, sweet raisins and spring onions. A simple dressing of mayonnaise, milk, red wine vinegar and sugar brings everything together. For optimal results, the salad needs to be made a full day in advance, allowing the flavours to meld beautifully in the refrigerator.
Ingredients
- 2 bunches broccoli, chopped into small pieces (I usually buy two bags of the precut broccoli florets)
- 10 slices bacon, cooked and crumbled
- 3/4-1 cup raisins
- 1 bunch green onion, chopped
- 1 cup mayonnaise
- 3 tablespoons milk
- 3 tablespoons red wine vinegar
- 1/4 cup sugar
Method
- Make this salad a full 24 hours before you intend to eat it.
- Combine the chopped broccoli, crumbled bacon, raisins and chopped green onions in a large bowl.
- Whisk the mayonnaise, milk, red wine vinegar and sugar together in another bowl until you have a smooth dressing.
- Pour the prepared dressing over the broccoli mixture and toss everything together until it is evenly coated.
- Place the salad in the refrigerator for 24 hours, stirring it 5 times during this period. Give it a final stir just before you serve.
