Spicy Cocoa Glazed Pecans
These glazed pecans offer a delightful mix of sweet and spicy flavours, coated in a blend of cocoa and chili powders. The recipe involves soaking the nuts in a sugar syrup before tossing them in the spiced cocoa mixture and baking until glossy. Once cooled, they make a fantastic snack on their own, a great accompaniment to drinks, or a crunchy topping for salads. The preparation takes about 30 minutes, not including cooling time.
Ingredients
- 1/2 cup granulated sugar
- 1/4 cup granulated sugar (yes, again)
- 2 cups warm water
- 3 cups pecan halves
- 2 tablespoons cocoa powder
- 2 tablespoons chili powder
- 1/4 teaspoon cayenne pepper
Method
- Set your oven to 350 degrees F and lightly spray a large, shallow baking sheet with vegetable oil.
- Mix the 1/2 cup of sugar with the warm water in a bowl, stirring to dissolve the sugar completely.
- Place the pecans in the sugar water, allow them to soak for 10 minutes, then drain off and discard the liquid.
- Combine the 1/4 cup of sugar, cocoa powder, chili powder, and cayenne pepper in a large bowl.
- Toss the drained pecans in the spicy cocoa mixture until they are fully coated, then arrange them in a single layer on the prepared baking sheet.
- Bake for 10 to 15 minutes, stirring a few times during cooking, until the nuts look dry and begin to glisten.
- Take the baking sheet from the oven and let it cool down fully on a wire rack.
- Keep the finished nuts in an airtight container stored somewhere cool and dry.
- Enjoy them as a snack, serve with your favourite beverages, or use as a sprinkle over salads.
