Spicy Cocoa Glazed Pecans

Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup granulated sugar (yes, again)
  • 2 cups warm water
  • 3 cups pecan halves
  • 2 tablespoons cocoa powder
  • 2 tablespoons chili powder
  • 1/4 teaspoon cayenne pepper

Method

  1. Set your oven to 350 degrees F and lightly spray a large, shallow baking sheet with vegetable oil.
  2. Mix the 1/2 cup of sugar with the warm water in a bowl, stirring to dissolve the sugar completely.
  3. Place the pecans in the sugar water, allow them to soak for 10 minutes, then drain off and discard the liquid.
  4. Combine the 1/4 cup of sugar, cocoa powder, chili powder, and cayenne pepper in a large bowl.
  5. Toss the drained pecans in the spicy cocoa mixture until they are fully coated, then arrange them in a single layer on the prepared baking sheet.
  6. Bake for 10 to 15 minutes, stirring a few times during cooking, until the nuts look dry and begin to glisten.
  7. Take the baking sheet from the oven and let it cool down fully on a wire rack.
