Fig Jam
This delicious fig jam is a wonderful condiment, particularly good with lamb tagine. It uses dried mission figs, which are simmered with maple syrup, lemon juice and a pinch of salt to create a thick, sweet preserve. The recipe yields about 1 cup and takes roughly 30 minutes to prepare and cook from start to finish.
Ingredients
- 1 cup dried mission figs (6 oz)
- 1 teaspoon fresh lemon juice
- 2 cups water
- 2 tablespoons maple syrup
- 1 pinch salt
Method
- Take the stems off the figs.
- Place the figs and lemon juice into a food processor and pulse until the figs are finely chopped.
- Transfer the chopped figs to a saucepan and add the water, maple syrup and salt.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 25 minutes until it reaches a thick consistency.
- Allow the jam to cool completely before serving.
