Spicy Chicken Salad With Cilantro Lime Dressing
This main dish salad combines cooked chicken, roasted peppers, rice, and fresh vegetables, all tossed in a vibrant homemade dressing. The dressing is a zesty blend of cilantro, lime, garlic, and ginger, pureed until smooth. It's a flavourful and satisfying meal that serves two to four people as an entree. The total preparation and cooking time is approximately 37 minutes.
Ingredients
- 2 garlic cloves
- 1 inch piece fresh ginger
- 1 cup fresh cilantro
- 1/4 cup lime juice
- 1 teaspoon white wine vinegar
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/2 tablespoon honey
- 1/4 cup grated parmesan cheese
- 1/4 cup canola oil
- 2 tablespoons olive oil
- 4 cups romaine lettuce, torn into bite-sized pieces
- 1/2 lb chicken breast, cooked and cubed
- 1 roasted red pepper, seeded and chopped
- 2 roasted poblano peppers, seeded and chopped
- 1 roasted jalapeno pepper, seeded and chopped
- 1 cup cooked rice
- 1/4 cup corn
- 1/4 cup black beans
- 1/4 cup diced tomato
Method
- Begin by preparing the dressing.
- Place the garlic and ginger into a food processor and chop them finely.
- Add the next eight ingredients, from the cilantro to the parmesan cheese, to the processor and puree until everything is well combined.
- With the processor running, pour both oils through the feed tube to incorporate them into the dressing.
- Next, move on to assembling the salad.
- Place the peppers under a broiler, turning them until the skins are charred on all sides, which should take about 7-10 minutes. Transfer the peppers to a bowl, cover it with plastic wrap, and allow them to cool. Once cool enough to handle, peel and seed the peppers, then chop them.
- In a large bowl, combine the chopped peppers with all the remaining salad ingredients. Add roughly half of the prepared cilantro-lime dressing and toss everything together.
- This recipe serves 2 - 4 as a main course.
