Spicy Cajun Soup
This hearty soup brings together the classic flavours of Cajun cooking. Smoked sausage is browned with onion and garlic, then simmered with tomatoes, sweetcorn and a blend of spices. The result is a robust and warming dish that is both simple to prepare and deeply satisfying. It makes a complete meal for four people in about half an hour.
Ingredients
- 200 g smoked sausage
- 2 tablespoons olive oil

- 400 g diced tomatoes, from a can, undrained
- 1/2 teaspoon sugar
- 1/4 teaspoon sea salt

- 1 tablespoon fresh parsley leaves, chopped
- 1/2 teaspoon cajun seasoning
- 200 g whole kernel corn, from a can, washed and drained
- 800 ml water

- 1 tablespoon ground black pepper
- 1 tablespoon white pepper
- 2 teaspoons cayenne pepper
Method
- Cut the sausage lengthways into quarters, then slice it. Warm the olive oil in a stockpot. Place the sausage in the pot and cook it for 3 -4 minutes until it takes on a light brown colour.
- Put the onion and garlic into the pot and cook them until they become tender.
- Pour the diced tomatoes and their liquid into the sausage mixture, then add the sugar. Bring this to a boil and let it boil for 3 minutes.
- Stir in the salt, pepper, basil, parsley and Cajun seasoning. Add the corn and water. Bring the soup back to a boil, then lower the heat and let it simmer without a lid for 15 minutes.
- For a homemade Cajun seasoning.
- Combine all the ingredients in a glass jar and keep it in the refrigerator. Give the jar a shake before you use the seasoning.
