Garlic Shrimp and Scallops
This elegant Cajun dish highlights the natural flavours of shrimp and scallops with a garlicky, lightly spiced sauce. Ingredients
- 1 teaspoon olive oil
- 2 tablespoons garlic, slivered
- 1/2 teaspoon crushed red pepper flakes
- 1/2 lb large shrimp, peeled,deveined
- 1/2 lb bay scallop
- 1/2 teaspoon paprika
- 4 tablespoons chicken broth
- 1 teaspoon fresh lime juice
- 1/2 cup finely chopped fresh Italian parsley
- salt and pepper
Method
- Warm the olive oil in a large, heavy skillet.
- Cook the slivered garlic until it starts to turn golden brown.
- Take the garlic out using a slotted spoon and reserve it.
- Put the crushed red pepper flakes into the skillet and turn up the heat.
- Return the garlic to the pan along with the shrimp, scallops, and paprika.
- Cook for 1-2 minutes, making sure to stir the mixture continuously.
- Pour in the chicken broth and let it cook for 1 minute.
- Transfer the cooked shrimp and scallops to a platter with a slotted spoon, keeping them warm.
- Stir the fresh lime juice, chopped parsley, and seasoning into the pan juices just to warm them.
- Immediately spoon the finished sauce over the reserved seafood and serve.
