New Orleans Shrimp Toss

Ingredients

  • 1 lb large shrimp
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon cajun seasoning
  • 1/2 cup onion, chopped
  • 2 cloves garlic, chopped
  • 1 (14 1/2 ounce) can campbell condensed cream of chicken with herbs soup
  • 1/2 cup milk
  • 1 teaspoon paprika
  • 2 tablespoons fresh chives, chopped

Method

  1. Remove the shells and devein the shrimp.
  2. Mix the shrimp with 1 T of the vegetable oil, the lemon juice, Worcestershire sauce, and Cajun seasoning in a large bowl.
  3. Warm the last 1 T of oil in a skillet.
  4. Place the chopped onion and garlic into the skillet.
  5. Continue cooking them until they become tender.
  6. Pour in the can of condensed cream of chicken with herbs soup, the milk, and the paprika.
  7. Allow the mixture to reach a boil.
  8. Transfer the shrimp mixture from the bowl into the skillet.
  9. Put a lid on the skillet and let it cook for 5 minutes or until the shrimp are fully cooked.
  10. Spoon the shrimp and sauce over cornbread or biscuits to serve.
  11. Top the finished dish with the chopped fresh chives.
