It combines chicken, Italian sausage and shrimp with rice, vegetables and a rich tomato base, all baked together until the rice is perfectly tender. Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 2 cups celery, chopped
  • 1 sweet green pepper, chopped
  • 1 sweet red pepper, chopped
  • 5 hot Italian sausages, cut into chunks
  • 2 boneless skinless chicken breasts, cubed
  • 3 garlic cloves, minced
  • 2 bay leaves
  • 2 teaspoons oregano
  • 1 teaspoon thyme
  • 1/2 teaspoon salt, black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 (28 ounce) can diced tomatoes
  • 1 (7 1/2 ounce) can tomato sauce
  • 4 cups chicken stock
  • 2 1/2 cups long grain white rice
  • 1 lb medium raw shrimp, peeled
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh parsley, chopped

Method

  1. Melt the butter with the olive oil in a large Dutch oven. Cook the chopped onions, celery and minced garlic until they soften. Stir in the chopped green and red peppers, bay leaves, oregano, thyme, salt, black pepper and cayenne pepper. Continue cooking until the peppers are tender, then transfer this vegetable mixture out of the pot.
  2. Place the sausage chunks into the pot to begin browning. Add the cubed chicken breast. Once the meats are browning nicely, return the cooked vegetables to the pot.
  3. Add the long grain white rice to the pot and stir thoroughly. Pour in the diced tomatoes, tomato sauce and chicken stock, then bring everything to a boil. Stir the peeled raw shrimp into the mixture.
  4. Cover the pot and transfer it to an oven preheated to 375 degrees. Bake for 40 minutes, or until the rice is tender. Remember to discard the bay leaves before serving.
  5. Garnish each individual serving with a sprinkle of chopped fresh parsley and green onions.
