Spicy Cajun Dip

This creamy and piquant dip brings together softened sun-dried tomatoes with reduced-fat cream cheese, plain yogurt and a blend of Cajun-inspired seasonings. It's a quick and simple recipe that requires just 20 minutes to prepare. The finished dip is best chilled before being served alongside crisp vegetable sticks or garlic-flavoured bagel crisps for a tasty snack or appetiser.

Spicy Cajun Dip

Ingredients

  • 1/2 cup dry-packed sun-dried tomato
  • 1 (8 ounce) package reduced-fat cream cheese
  • 1/2 cup nonfat plain yogurt
  • 1/4 cup chili sauce
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped green onion
  • 1 garlic clove, minced
  • 1/2 teaspoon celery seed
  • 1/8 teaspoon ground red pepper (cayenne)

Method

  1. Place the sun-dried tomatoes into a small bowl and cover them with 1 cup of boiling water.
  2. Allow the tomatoes to soak at room temperature for 5-10 minutes.
  3. Drain the water from the tomatoes and chop them finely.
  4. While the tomatoes are soaking, take a separate small bowl and blend the cream cheese, yogurt and chili sauce together.
  5. Stir this mixture until it is smooth and well combined.
  6. Incorporate the chopped tomatoes along with all the other remaining ingredients and mix thoroughly.
  7. Place the dip in the refrigerator to chill until you are ready to serve.
  8. Give the dip a good stir just before you plan to serve it.
  9. Present the dip with an assortment of fresh, cut vegetables or garlic bagel crisps.
