Spicy Cajun Dip
This creamy and piquant dip brings together softened sun-dried tomatoes with reduced-fat cream cheese, plain yogurt and a blend of Cajun-inspired seasonings. It's a quick and simple recipe that requires just 20 minutes to prepare. The finished dip is best chilled before being served alongside crisp vegetable sticks or garlic-flavoured bagel crisps for a tasty snack or appetiser.
Ingredients
- 1/2 cup dry-packed sun-dried tomato
- 1 (8 ounce) package reduced-fat cream cheese
- 1/2 cup nonfat plain yogurt
- 1/4 cup chili sauce
- 1/4 cup chopped green pepper
- 1/4 cup chopped green onion
- 1 garlic clove, minced
- 1/2 teaspoon celery seed
- 1/8 teaspoon ground red pepper (cayenne)
Method
- Place the sun-dried tomatoes into a small bowl and cover them with 1 cup of boiling water.
- Allow the tomatoes to soak at room temperature for 5-10 minutes.
- Drain the water from the tomatoes and chop them finely.
- While the tomatoes are soaking, take a separate small bowl and blend the cream cheese, yogurt and chili sauce together.
- Stir this mixture until it is smooth and well combined.
- Incorporate the chopped tomatoes along with all the other remaining ingredients and mix thoroughly.
- Place the dip in the refrigerator to chill until you are ready to serve.
- Give the dip a good stir just before you plan to serve it.
- Present the dip with an assortment of fresh, cut vegetables or garlic bagel crisps.
