Ingredients

  • 3/4 cup butter
  • 2 cups sugar
  • 3/4 teaspoon ground red pepper
  • 1 finely chopped sauteed jalapeno (optional)
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)

Method

  1. Set your oven to 350 and grease a 9x9-inch or 9x13-inch baking pan with butter or a butter-flavoured spray.
  2. Use a mixer to cream the butter thoroughly, avoiding margarine or spreads.
  3. Mix the sugar and ground red pepper into the butter and continue beating with the mixer until the mixture is light and fluffy.
  4. Switch to a wooden spoon and stir in the vanilla extract, almond extract, and eggs just until incorporated, being careful not to overmix.
  5. For a spicier result, stir in the finely chopped jalapeño at this stage.
  6. In another bowl, whisk together the flour, unsweetened cocoa powder, ground cinnamon, and salt.
  7. Fold the dry ingredients gently into the butter mixture, adding the optional chocolate chips at the same time if using.
  8. Transfer the batter to the prepared pan and, if desired, scatter the optional chopped walnuts evenly over the top.
  9. Place the pan on the centre oven rack. bake for 35 to 40 minutes for a 9x9-inch pan or 30 to 35 minutes for a 9x13-inch pan.
  10. Allow the brownies to cool completely on a wire rack before slicing them into squares.
