This recipe transforms a family favourite cookie into easy-to-handle spiced apple bars. Baked in a 9x13 pan, they are simpler to make and serve. A sweet glaze can be added, though the bars are delicious without it. The recipe yields 16 bars and takes about 35 minutes from start to finish.

Fresh Apple Bars

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup softened butter
  • 1 1/3 cups brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon clove
  • 1/2 teaspoon nutmeg
  • 1 large egg
  • 1/4 cup apple cider (you can use apple juice or milk)
  • 1 cup finely chopped peeled apple (minced)
  • 1 cup powdered sugar
  • 1 tablespoon butter
  • 1/4 teaspoon vanilla
  • 1 1/2 tablespoons milk

Method

  1. For the glaze, mix the ingredients with a spoon until you achieve a smooth consistency.
  2. Heat your oven to 375°.
  3. Sift the flour together with the baking soda and set this mixture aside.
  4. Use an electric mixer to cream the butter and brown sugar.
  5. Mix in the salt, spices, and the egg.
  6. Incorporate half of the flour mixture and blend thoroughly.
  7. Blend in half of the apple cider.
  8. Toss the chopped apples with the remaining flour mixture to coat them.
  9. Add this apple-flour mixture and the rest of the cider to the creamed batter, stirring by hand.
  10. For cookies, drop very small spoonfuls onto a sheet and bake for 8-9 minutes.
  11. Carefully remove the warm cookies from the sheet and glaze them while still barely warm.
  12. For bars, spread the batter into a 9x13 pan that has been sprayed with cooking spray.
  13. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  14. Cut the bars while they are still just barely warm.
