Fresh Apple Bars
This recipe transforms a family favourite cookie into easy-to-handle spiced apple bars. Baked in a 9x13 pan, they are simpler to make and serve. A sweet glaze can be added, though the bars are delicious without it. The recipe yields 16 bars and takes about 35 minutes from start to finish.
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 cup softened butter
- 1 1/3 cups brown sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon clove
- 1/2 teaspoon nutmeg
- 1 large egg
- 1/4 cup apple cider (you can use apple juice or milk)
- 1 cup finely chopped peeled apple (minced)
- 1 cup powdered sugar
- 1 tablespoon butter
- 1/4 teaspoon vanilla
- 1 1/2 tablespoons milk
Method
- For the glaze, mix the ingredients with a spoon until you achieve a smooth consistency.
- Heat your oven to 375°.
- Sift the flour together with the baking soda and set this mixture aside.
- Use an electric mixer to cream the butter and brown sugar.
- Mix in the salt, spices, and the egg.
- Incorporate half of the flour mixture and blend thoroughly.
- Blend in half of the apple cider.
- Toss the chopped apples with the remaining flour mixture to coat them.
- Add this apple-flour mixture and the rest of the cider to the creamed batter, stirring by hand.
- For cookies, drop very small spoonfuls onto a sheet and bake for 8-9 minutes.
- Carefully remove the warm cookies from the sheet and glaze them while still barely warm.
- For bars, spread the batter into a 9x13 pan that has been sprayed with cooking spray.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cut the bars while they are still just barely warm.
