Chocolate Toffee Graham Bars
These delightful treats blur the line between a bar cookie and homemade confection. Graham crackers form a base for a rich, boiled butter and brown sugar toffee studded with nuts. After a brief bake, chocolate chips are melted over the top and finished with colourful sprinkles. Once cooled and cut, they yield a generous batch ideal for sharing at festive gatherings or as a sweet gift. The recipe is straightforward and yields impressive results.
Ingredients
- 1 1/4 cups butter or 1 1/4 cups margarine
- 1 cup dark brown sugar
- 1 cup chopped walnuts or 1 cup pecans
- 15 whole graham crackers (can be honey graham or plain)
- 2 cups chocolate chips
- 1/4 cup colored sprinkles
Method
- Arrange whole graham crackers to cover the base of a lightly greased 11 by 17 inch jelly roll pan.
- Trim additional crackers to fill any gaps and achieve full coverage of the pan.
- Combine the butter and brown sugar in a saucepan and bring the mixture to a boil.
- Once bubbling, stir in the chopped walnuts or pecans and return the mixture to a boil.
- Evenly pour the hot toffee mixture over the layer of graham crackers.
- Bake at 350 degrees for 8 minutes.
- Take the pan from the oven and scatter the chocolate chips across the surface.
- The chips will not cover the crackers completely.
- Switch off the oven and return the pan for 1 or 2 minutes to soften the chocolate chips.
- Remove the pan and use a spatula to spread the melted chocolate over the bars.
- Add coloured sprinkles on top of the warm chocolate for a decorative finish.
- Allow the bars to cool for about 1 hour before cutting into small squares with a sharp knife.
- Some pieces may break during cutting, providing tasty scraps to enjoy.
- Store the finished bars in a sealed container kept in the fridge.
