Chocolate Toffee Graham Bars

Ingredients

  • 1 1/4 cups butter or 1 1/4 cups margarine
  • 1 cup dark brown sugar
  • 1 cup chopped walnuts or 1 cup pecans
  • 15 whole graham crackers (can be honey graham or plain)
  • 2 cups chocolate chips
  • 1/4 cup colored sprinkles

Method

  1. Arrange whole graham crackers to cover the base of a lightly greased 11 by 17 inch jelly roll pan.
  2. Trim additional crackers to fill any gaps and achieve full coverage of the pan.
  3. Combine the butter and brown sugar in a saucepan and bring the mixture to a boil.
  4. Once bubbling, stir in the chopped walnuts or pecans and return the mixture to a boil.
  5. Evenly pour the hot toffee mixture over the layer of graham crackers.
  6. Bake at 350 degrees for 8 minutes.
  7. Take the pan from the oven and scatter the chocolate chips across the surface.
  8. The chips will not cover the crackers completely.
  9. Switch off the oven and return the pan for 1 or 2 minutes to soften the chocolate chips.
  10. Remove the pan and use a spatula to spread the melted chocolate over the bars.
  11. Add coloured sprinkles on top of the warm chocolate for a decorative finish.
  12. Allow the bars to cool for about 1 hour before cutting into small squares with a sharp knife.
  13. Some pieces may break during cutting, providing tasty scraps to enjoy.
  14. Store the finished bars in a sealed container kept in the fridge.
