Lemon Brownies
These bar cookies are wonderfully moist with a vibrant sweet and tart lemon flavour. The recipe uses a lemon cake mix and gelatin for a quick, easy batter that bakes into a tender cake. While still warm from the oven, it's pierced and covered with a simple glaze made from icing sugar and fresh lemon juice. Once cooled, it's cut into squares for serving. This recipe yields 30 to 36 portions and takes about 40 minutes to prepare and bake.
Ingredients
- 1 (18 ounce) box lemon cake mix
- 1 (3 ounce) package lemon gelatin
- 1/2 cup cooking oil
- 3 eggs
- 1 cup icing sugar
- 1/2 cup lemon juice
Method
- Prepare a 13" X 9" pan by greasing and flouring it.
- Set your oven to 325°F. In a bowl, combine the dry cake mix, dry gelatin powder, cooking oil, and eggs.
- Transfer the combined batter into your prepared baking pan.
- Place the pan in the oven and bake at 325F for 25 to 30 minutes until fully cooked.
- Take the baked cake out of the oven.
- Using a toothpick, quickly poke numerous holes across the entire surface of the warm cake.
- Whisk together the icing sugar and lemon juice until you have a smooth mixture.
- Spoon this glaze mixture evenly over the top of the cake.
- Allow the cake to cool completely before slicing it into individual squares.
