This recipe guides you through creating a fragrant blackberry vinegar. Whole spices are simmered in a sweetened vinegar base with fresh blackberries to produce a richly flavoured condiment. After straining, it is bottled with fresh berries for an attractive finish. The process takes about 30 minutes to complete, yielding one quart of versatile vinegar ready for culinary use.

Spicy Blackberry Vinegar

Ingredients

  • 2 lbs blackberries
  • 2 cinnamon sticks
  • 2 teaspoons allspice berries
  • 2 teaspoons whole cloves
  • 2 1/3 cups vinegar
  • 2 cups sugar
  • fresh blackberries, for garnish

Method

  1. Break the cinnamon sticks into pieces.
  2. Place all the spices onto a square of cheesecloth and secure it with string.
  3. Combine the vinegar and sugar in a large saucepan.
  4. Stir the mixture until the sugar dissolves completely.
  5. Introduce the prepared spice bag to the pan.
  6. Bring the liquid to a boil, then reduce the heat and let it simmer for 5 minutes.
  7. Add the blackberries and continue to simmer for 10 minutes longer.
  8. Take the pan off the heat and allow the blackberry mixture to cool fully.
  9. Remove and discard the spice bag.
  10. Fit a funnel with two layers of cheesecloth.
  11. Pour the flavoured vinegar through the cloth into sterilised bottles, filling to within 1/8-inch of the tops.
  12. Place fresh blackberries into each bottle.
  13. Seal each bottle securely and apply a label.
  14. Your vinegar is now prepared for use.
