Spicy Banana Bars

Ingredients

  • 1 cup pillsbury's best all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon double-acting baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon french's cinnamon
  • 1/4 teaspoon french's clove
  • 1/4 teaspoon french's allspice
  • 1/4 cup butter
  • 1/3 cup ripe banana, mashed (1 small)
  • 1 unbeaten egg
  • 1/4 cup milk
  • 1/2 teaspoon allspice
  • 1/3 cup funsten's chopped pecans
  • 2 tablespoons butter, melted
  • 1 tablespoon hot water
  • 2 teaspoons lemon juice
  • 1 cup sifted confectioners' sugar

Method

  1. Set your oven to heat to 350 degrees F.
  2. Sift the all-purpose flour with the sugar, baking powder, salt, baking soda, cinnamon, cloves, and allspice into a bowl.
  3. Cream the butter until smooth, then incorporate the mashed banana fully.
  4. Blend in the unbeaten egg and beat the mixture well.
  5. Alternately add the prepared dry ingredients and the milk to the banana mixture, starting and finishing with the dry ingredients. Mix thoroughly following each addition. Use a low speed if employing an electric mixer.
  6. Fold the chopped pecans into the batter.
  7. Transfer the batter to a 13x9x2-inch pan that has been well greased and lightly floured, spreading it evenly.
  8. Bake at 350 degrees F for 22 to 25 minutes. Prepare to frost the bars while they are still warm.
  9. Note: Should you use self-rising flour, leave out the baking powder, salt, and baking soda.
  10. For the lemon frosting, combine the melted butter, hot water, and lemon juice. Stir in the sifted confectioners' sugar. If the frosting is too thick, thin it cautiously with extra hot water added a little at a time.
