Cedar Baked Salmon with Lobster Sauce

This Canadian dish features salmon fillets baked on soaked cedar planks, which impart a subtle smoky flavour. The salmon is served with a luxurious sauce made from sauteed onion, lobster meat, brandy and reduced heavy cream. The recipe, from chef James Burnell, can also be prepared on a grill. It serves four people and takes only 20 minutes from start to finish.

Cedar Baked Salmon with Lobster Sauce

Ingredients

  • 4 (7 ounce) salmon fillets
  • 2 cedar planks, soaked in water for 24 hours
  • 1/2 teaspoon olive oil
  • 1/4 cup onion, finely diced
  • 1/2 cup chopped lobster meat
  • 2 ounces brandy
  • 1 cup heavy cream (35%)

Method

  1. Arrange two salmon fillets on each of the soaked cedar planks and season with salt and pepper as desired.
  2. Bake the planks in an oven preheated to 400F for 15 minutes.
  3. Warm the oil in a small pan and cook the onion until soft, then stir in the lobster, brandy and cream.
  4. Continue cooking the sauce until the volume of cream has reduced by half.
  5. Take the pan off the heat, adjust the seasoning, and spoon the finished sauce over the baked salmon.
