Cedar Baked Salmon with Lobster Sauce
This Canadian dish features salmon fillets baked on soaked cedar planks, which impart a subtle smoky flavour. The salmon is served with a luxurious sauce made from sauteed onion, lobster meat, brandy and reduced heavy cream. The recipe, from chef James Burnell, can also be prepared on a grill. It serves four people and takes only 20 minutes from start to finish.
Ingredients
- 4 (7 ounce) salmon fillets
- 2 cedar planks, soaked in water for 24 hours
- 1/2 teaspoon olive oil
- 1/4 cup onion, finely diced
- 1/2 cup chopped lobster meat
- 2 ounces brandy
- 1 cup heavy cream (35%)
Method
- Arrange two salmon fillets on each of the soaked cedar planks and season with salt and pepper as desired.
- Bake the planks in an oven preheated to 400F for 15 minutes.
- Warm the oil in a small pan and cook the onion until soft, then stir in the lobster, brandy and cream.
- Continue cooking the sauce until the volume of cream has reduced by half.
- Take the pan off the heat, adjust the seasoning, and spoon the finished sauce over the baked salmon.
