Ingredients

  • 4 loaves hard bread
  • 2 lbs salt cod fish
  • 6 -8 potatoes
  • 1 cup salt pork, finely diced
  • 2 cups onions, diced
  • 1/4 cup butter
  • 2 medium onions, chopped
  • 2 tablespoons flour
  • 1 cup water

Method

  1. Soak the hard bread overnight in cold water. In a separate large pot, soak the salt cod in water overnight as well.
  2. In the morning, drain the water from the cod and replace it with fresh water.
  3. When ready to cook, add the potatoes to the pot with the cod. Simmer gently until everything is cooked, which should take about 20-30 minutes. Remove from the heat and drain.
  4. Gently heat the soaked hard bread until it reaches a boil, then drain it.
  5. For the drawn butter topping, melt the butter. Add the chopped onions and fry until soft. Pour in the water, bring to a boil, and thicken by stirring in the flour.
  6. For the scrunchions, place the finely diced salt pork in a frying pan.
  7. Heat the pan until the fat renders from the salt pork.
  8. Add the diced onions to the pan and cook them until tender.
