Codfish Cakes using Salt Cod
This traditional Canadian recipe transforms salt cod into flavourful fish cakes. The salted fish is soaked and simmered before being combined with mashed potatoes, soaked breadcrumbs, butter, pepper, and a dash of hot pepper sauce. The mixture is shaped and pan-fried in vegetable oil until beautifully browned and crisp. It yields eight servings and requires just under 8 hours total time, including soaking. Garnish with fresh parsley for a classic finish.
Ingredients
- 1 lb salt cod fish
- 1/2 cup dried breadcrumbs
- 1/2 cup milk
- 2 1/2 cups mashed potatoes
- 2 tablespoons melted butter
- 1/2 teaspoon pepper
- 1 dash hot pepper sauce
- 1/4 cup vegetable oil, for frying
- 2 tablespoons chopped fresh parsley, for garnish
Method
- Submerge the salt cod in cold water to soak for a minimum of 6 hours or leave it overnight.
- Refresh the soaking water at least 3 times throughout this period.
- Take the fish from the water and give it a thorough rinse.
- Put the rinsed fish into a saucepan and cover it with fresh, cold water, then place it on the hob.
- Allow the water to reach a simmer and continue cooking the fish for 10 minutes.
- Drain the cooked cod and leave it aside until it has cooled sufficiently to touch.
- In a separate small bowl, let the dried breadcrumbs soak in the milk.
- Flake the cooled fish with a fork into a large mixing bowl, ensuring all bones are discarded.
- To the flaked fish, add the soaked breadcrumb mixture, mashed potatoes, melted butter, pepper, and hot pepper sauce.
- Stir everything together until it is fully incorporated.
- Shape the combined mixture into patties measuring 2 1/2 inches across.
- Pour half of the vegetable oil into a large frying pan and place it over the heat.
- Fry the cakes for approximately 2 minutes on each side until they are browned on both surfaces.
