BBQ Chicken With a Zing
This tasty Canadian chicken dish features a vibrant marinade of mustard, lemon, and garlic. You can cook it on the barbecue or use an oven grill. Serve it alongside rice, asparagus, or your preferred vegetables. For a different presentation, you can cut the chicken into pieces, marinate them, and thread onto skewers. The recipe serves four and takes about 35 minutes to prepare and cook, not including marinating time.
Ingredients
- 1 lb boneless skinless chicken breast
- 1/2 cup mustard
- 1/4 cup white vinegar
- 1/4 cup fresh lemon juice
- 1/4 cup lite olive oil
- 2 tablespoons honey
- 3 garlic cloves, minced (or more)
- 1 tablespoon crushed dried oregano
Method
- Mix together the mustard, vinegar, lemon juice, oil, honey and garlic.
- Reserve 1/3 of a cup of this mixture in the fridge to serve as a sauce later.
- Put the chicken in a shallow dish or a sealable plastic bag and cover it with the rest of the marinade.
- Place in the refrigerator for 6 hrs, covering if using a dish, and turn or shake it now and then.
- Remove the chicken from the marinade and cook on a hot BBQ for 15-18 Min until cooked through, or use your oven grill.
- Present the chicken with the chilled mustard sauce you set aside.
