Ingredients

  • 2 lbs very firm-fleshed white fish
  • 2 lemons, quartered
  • 1 bay leaf
  • 1 pinch peppercorn
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1/2 teaspoon horseradish
  • 2 -3 teaspoons pickle relish (sweet or dill)
  • 1 pinch salt
  • 1 pinch pepper

Method

  1. Place the fish, lemon quarters, bay leaf, and peppercorns into a large saucepan and add enough water to cover them completely.
  2. Bring the water to a boil, then lower the heat and cook until the fish is just done, which should take 10 minutes or less.
  3. Take the fish out of the cooking liquid and transfer it to a shallow bowl or platter, allowing it to cool down fully.
  4. While the fish cools, prepare the sauce by whisking all the listed sauce ingredients together in a separate bowl.
