Cheesy Fish
This is a straightforward South African fish bake, ideal for a midweek dinner. White fish fillets are topped with a rich mixture of cream cheese, mayonnaise, cheddar, lemon juice, and herbs, then baked until golden. It can be prepared in advance and served with your choice of hot or cold accompaniments for a complete meal.
Ingredients
- 500 g white fish fillets
- 80 ml cream cheese
- 80 ml mayonnaise
- 100 g cheddar cheese, grated
- 10 ml lemon juice
- fresh coarse ground black pepper
- chopped parsley
Method
- Arrange the fish fillets in a greased ovenproof dish.
- Mix together the cream cheese, mayonnaise, grated cheddar, lemon juice, black pepper, and parsley.
- Spread the cheese mixture evenly over the fish.
- Bake the dish at 190°C for 20 minutes.
