This South African salad, known as the 4 C Salad, combines sweet corn kernels with coarsely grated carrots and cheddar cheese, plus finely chopped celery. It is served on a bed of crisp romaine lettuce leaves. The dish is finished with a tangy dressing made from plain yogurt and whole grain mustard, seasoned simply with salt and pepper. It is a quick, no-cook option that serves between two and six people.

4 C Salad

Ingredients

  • 500 g corn kernels
  • 250 g fresh carrots, coarsely grated
  • 3 stalks celery, finely chopped
  • 125 g cheddar cheese, coarsely grated
  • 1 head romaine lettuce
  • salt and pepper, to taste
  • 250 ml plain yogurt
  • 5 ml whole grain mustard

Method

  1. Arrange the romaine lettuce leaves on a platter to form a base.
  2. Combine the corn kernels, grated carrot, chopped celery and grated cheddar cheese in a bowl, then spoon this mixture over the lettuce.
  3. Whisk the plain yogurt with the whole grain mustard, salt and pepper to create the dressing, and pour it over the assembled salad.
  4. Place the salad in the refrigerator to chill before serving.
