4 C Salad
This South African salad, known as the 4 C Salad, combines sweet corn kernels with coarsely grated carrots and cheddar cheese, plus finely chopped celery. It is served on a bed of crisp romaine lettuce leaves. The dish is finished with a tangy dressing made from plain yogurt and whole grain mustard, seasoned simply with salt and pepper. It is a quick, no-cook option that serves between two and six people.
Ingredients
- 500 g corn kernels
- 250 g fresh carrots, coarsely grated
- 3 stalks celery, finely chopped
- 125 g cheddar cheese, coarsely grated
- 1 head romaine lettuce
- salt and pepper, to taste
- 250 ml plain yogurt
- 5 ml whole grain mustard
Method
- Arrange the romaine lettuce leaves on a platter to form a base.
- Combine the corn kernels, grated carrot, chopped celery and grated cheddar cheese in a bowl, then spoon this mixture over the lettuce.
- Whisk the plain yogurt with the whole grain mustard, salt and pepper to create the dressing, and pour it over the assembled salad.
- Place the salad in the refrigerator to chill before serving.
