BBQ Prawn Sticks With Roasted Garlic Mayo
These South African prawn sticks are marinated in a spiced butter and oil blend before being threaded onto skewers and grilled. They are served with a rich, homemade roasted garlic mayonnaise for dipping. The recipe uses large prawns in their shells for maximum flavour and requires a short marinating time. Perfect for a barbecue, it serves 6 to 8 people and takes about 50 minutes to prepare and cook.
Ingredients
- 1 head garlic, roasted, removed from husk
- 1 cup mayonnaise
- 1/2 small lemon, juice of
- salt & freshly ground black pepper
- 2 teaspoons curry paste
- 4 tablespoons melted butter
- 4 tablespoons olive oil
- 24 large prawns, in shell heads off, deveined and butterflied or 3 lbs large shrimp
- 24 wooden skewers, soaked in water for 30 minutes
Method
- Combine the roasted garlic, mayonnaise and lemon juice, then season with salt and pepper to your liking. Set this mixture aside.
- In a separate bowl, whisk the curry paste with the melted butter and olive oil. Place the prawns in this marinade for approximately thirty minutes.
- Thread each marinated prawn lengthwise onto the prepared wooden skewers.
- Cook the skewered prawns over hot coals for 3 to 5 minutes, until they turn opaque. While grilling, brush them with any remaining butter mixture.
- Present the grilled prawn sticks with the prepared roasted garlic mayo for dipping.
