These South African prawn sticks are marinated in a spiced butter and oil blend before being threaded onto skewers and grilled. BBQ Prawn Sticks With Roasted Garlic Mayo

Ingredients

  • 1 head garlic, roasted, removed from husk
  • 1 cup mayonnaise
  • 1/2 small lemon, juice of
  • salt & freshly ground black pepper
  • 2 teaspoons curry paste
  • 4 tablespoons melted butter
  • 4 tablespoons olive oil
  • 24 large prawns, in shell heads off, deveined and butterflied or 3 lbs large shrimp
  • 24 wooden skewers, soaked in water for 30 minutes

Method

  1. Combine the roasted garlic, mayonnaise and lemon juice, then season with salt and pepper to your liking. Set this mixture aside.
  2. In a separate bowl, whisk the curry paste with the melted butter and olive oil. Place the prawns in this marinade for approximately thirty minutes.
  3. Thread each marinated prawn lengthwise onto the prepared wooden skewers.
  4. Cook the skewered prawns over hot coals for 3 to 5 minutes, until they turn opaque. While grilling, brush them with any remaining butter mixture.
  5. Present the grilled prawn sticks with the prepared roasted garlic mayo for dipping.
