London Broil Marinade
This straightforward marinade transforms an economical cut of beef. Combine soy sauce, ketchup, oil, and herbs to create a savoury mixture. After marinating the scored meat for several hours, it is ready for the grill. The result is a juicy and flavourful steak, perfect for slicing and serving with classic sides. The process is simple but requires some advance planning for the best texture.
Ingredients
- 1 garlic clove, minced
- 1 teaspoon salt
- 3 tablespoons soy sauce
- 1 tablespoon ketchup
- 1 tablespoon vegetable oil
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 4 lbs flank steaks (see my note) or 4 lbs london broil beef (see my note)
Method
- Combine the minced garlic, salt, soy sauce, ketchup, vegetable oil, black pepper, and dried oregano in a small bowl.
- Score the meat on both sides with a diamond pattern, cutting about 1/8 inch deep. Rub the garlic mixture thoroughly into all sides of the meat. Wrap it tightly in aluminium foil and refrigerate for 5 to 6 hours, or overnight, turning the meat every few hours.
- Prepare your outdoor grill, preheating it for high heat. Lightly oil the cooking grate.
- Place the marinated meat on the hot grill. Cook it for 3 to 7 minutes on each side, according to your preferred level of doneness.
