Lemon Pepper Cheese Straws
These savoury cheese straws combine sharp pepper jack cheese with fresh lemon zest and cracked black pepper, all wrapped in flaky puff pastry. The dough is rolled thin, filled, twisted into spirals, and baked until perfectly golden and crisp. They are an ideal snack for gatherings and can be prepared in about 25 minutes, yielding 18 individual straws.
Ingredients
- 1 sheet frozen puff pastry, thawed according to package directions
- 1/2 cup pepper jack-style cheese
- 1 lemon, zest of
- 1 teaspoon black peppercorns, coarsely ground
- 1/2 teaspoon kosher salt or 1/2 teaspoon coarse sea salt
Method
- On a lightly floured surface, roll the thawed puff pastry sheet out to a thickness of 1/8th of an inch, aiming for a roughly rectangular shape.
- Evenly distribute the cheese, lemon zest, ground pepper, and salt over the top half of the pastry. Fold the bottom half over the filling, pressing gently to seal. Slice the dough into strips that are 1/2-3/4 inch wide.
- Twist each strip by holding both ends and turning them in opposite directions to create a spiral. Position the twists on a baking sheet lined with parchment paper, pressing the ends down. Space them about 1 inch apart. Freeze the entire tray for 30 minutes.
- As the straws finish chilling, preheat the oven to 425 degrees F.
- Place the baking sheet directly from the freezer into the oven. Bake for 13-16 minutes until the straws are uniformly golden brown. Cool fully on a wire rack before serving.
