Quinoa Greek Salad

Ingredients

  • 2 cups chicken stock
  • 1 cup quinoa
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup green onion, diced
  • 1/4 cup black olives
  • 1/4 cup red onion, diced
  • 3 ounces reduced-fat feta cheese
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano

Method

  1. Place the stock in a saucepan and bring it to a boil.
  2. Add the quinoa to the boiling stock.
  3. Lower the heat, cover the pan, and let it simmer.
  4. Allow it to cook for 15 minutes until all the liquid has been taken up.
  5. Move the cooked quinoa to a large bowl and let it cool down.
  6. Mix the diced vegetables and crumbled cheese into the cooled quinoa.
  7. Combine the lemon juice, oil, garlic, and herbs by whisking them in a separate bowl.
  8. Drizzle the prepared dressing over the salad and toss everything to coat.
