Quinoa Greek Salad

Ingredients
- 2 cups chicken stock
- 1 cup quinoa
- 1/2 cup red pepper, diced
- 1/2 cup green pepper, diced
- 1/2 cup cucumber, diced
- 1/4 cup green onion, diced
- 1/4 cup black olives
- 1/4 cup red onion, diced
- 3 ounces reduced-fat feta cheese
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon basil
- 1/2 teaspoon oregano

Method
- Place the stock in a saucepan and bring it to a boil.
- Add the quinoa to the boiling stock.
- Lower the heat, cover the pan, and let it simmer.
- Allow it to cook for 15 minutes until all the liquid has been taken up.
- Move the cooked quinoa to a large bowl and let it cool down.
- Mix the diced vegetables and crumbled cheese into the cooled quinoa.
- Combine the lemon juice, oil, garlic, and herbs by whisking them in a separate bowl.
- Drizzle the prepared dressing over the salad and toss everything to coat.
