Chile-Cheese Grits
This hearty grain dish offers a delicious alternative to potatoes. It features grits cooked with longhorn cheese, chopped green chillies, and savoury seasonings, all baked until set. Ingredients
- 6 cups water
- 1 1/2 cups grits, uncooked
- 2 teaspoons salt
- 3 eggs, beaten (can use egg substitute)
- 1 lb longhorn cheese, shredded
- 3 teaspoons savory salt
- 1/2 cup butter, melted
- 1 (4 ounce) can chopped green chilies, drained
- 1 dash hot pepper sauce
- 1 dash paprika
Method
- Set your oven to heat to 250°F.
- Place the water in a large saucepan and bring it to a boil, then stir in the grits and cook them as directed on the packet.
- Mix in all the other listed ingredients thoroughly.
- Transfer the mixture to a 9x12 inch baking dish coated with non-stick spray and bake for 1-1/2 to 2 hours.
- You can assemble this dish ahead of time and store it in the refrigerator before baking.
